Sausage Tray Bake

Ingredients

Serves 4

8-10 Sausages 

2 red peppers cut into chunks 

2 red onions sliced into wedges 

10 small new potatoes 

1-2 tablespoons Balsamic Vinegar 

Basil leaves to finish (optional)

A large roasting tin

Method 

  • Start by drizzling the potatoes with olive oil and seasoning them with salt and pepper. 

  • Place in an oven of 210 degrees for 30 mins. 

  • Remove from the oven and add the peppers onions, sausages and drizzle with balsamic. 

  • Give it a good toss and then return to the oven for 25-30 minutes. 

  • Remove from the oven and sprinkle with torn basil leaves.
