600-700g cod fillet (skin removed) cut into 4
1 tin tomatoes
1 red onion - finely chopped
4 cloves garlic - crushed
250g mixed olives - drained
4 red peppers from a jar - drained and sliced
Ready with in 30 minutes, this healthy yet hearty fish dish will really hit the spot. You can use any white firm fish such as Pollock, Haddock or Hake. When I made this sauce I doubled up the quantities and saved half to use as a delicious pasta sauce.
Pre-heat the oven to 210 degrees.
Start by sautéing the onion until soft.
Now add the garlic and cook for 2 minutes.
Add the olives, peppers and tomatoes (check the seasoning) bring to a simmer and cook for 20 minutes. Add a little water to loosen if necessary.
Add the cod fillets to the pan seasoning them generously and into the oven for 10-13 minutes.
Sprinkle with basil and serve with crusty bread, rice or new potatoes.
